About Us

 

For over 20 years, Carol Jean's Fine Cuisine has served the appetites of Central Illinois.  Carol Jean Fraase and Sara Workman are the core team that plans personalized dishes for people who enjoy interesting events in unique locations. 

Our dishes are prepared with a recipe of experience and a dash of experimentation, with some old Fraase family recipes for good measure.  Carol has attended cooking classes at La Varenne, Ecole De Cuisine in Paris, France, Mohawk Mountain House in New York, and Blackberry Farms in Tennessee.  Both of us enjoy learning "trade" secrets from others and are always searching for new recipes and techniques.  Carol says her niece, Sara, has been serving with her since she could first carry a tray and ask, "Would you like an hors d'oeurve?"

We apply our creativity and our understanding of your wishes, so that each party is different from everyone else's.  We do not desire to be fully recognizable as your caterer and prefer to stay out of the limelight.  Our intent is to make sure your party or event is memorable.  We would be pleased if you received baskets of thank you cards afterward.

We believe our smallness and unique approaches differentiate us from competitors.  Our food is predominately homemade.  Often, we utilize our own herbs from our gardens to enhance presentation. 

In the Springfield, Illinois area, we have earned the trust of our patrons and a corresponding impeccable reputation over the years.  We are proud of that.  People know we will not let them down and will help create memories from their event to last a lifetime.  Many young people, often sons and daughters of our patrons, move to larger cities yet return to have their weddings or celebrations with Carol Jean's Fine Cuisine.  We also serve many State legislative receptions and interface with new people each time.  For anyone who does not know us personally, we wish to, and will, instill in them a sense of complete confidence in us.
